Roasted Brussels Sprouts with Cranberries and Pine Nuts
Ingredients
- 1 pound brussels sprouts trimmed and halved lengthwise
- 2 tbsp olive oil
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/4 tsp garlic powder
- 1/4 cup pine nuts
- 1/2 cup dried cranberries
Instructions
- Preheat oven to 400F
- In a large bowl, toss brussels sprouts with oil, salt, pepper, and garlic powder.
- Roast on a baking sheet stirring once or twice, until golden brown, crisp on the outside, and tender on the inside. About 30-35 minutes.
- During the last 7-10 minutes of cook time, stir in nuts and cranberries.
- Transfer to the serving dish and serve immediately.
