Slow Cooker Chicken Tortilla Soup

Ingredients
  

Soup

  • 3 boneless skinless chicken breasts
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • salt and pepper
  • 1 medium yellow onion chopped
  • 2 bell pepper chopped
  • 1 28 oz can diced tomatoes with juice
  • 1 can Ro-Tel Tomatoes with green chiles
  • 3 cups chicken broth
  • 6 oz tomato paste
  • 6 chipotle peppers in adobo or less if you don't like spicy
  • 2 can black beans drained and rinsed
  • 1 limes juiced
  • 1 14 oz can corn whole kernel

Toppings

  • sour cream
  • tortilla strips
  • cilantro
  • avocado
  • cheddar cheese

Instructions
 

  • Place the chicken in the crock pot and season with chili powder, cumin, garlic powder and salt and pepper.
  • Add the onion, bell pepper, black beans, corn, tomatoes, chicken broth, tomato paste, chipotle peppers. Stir together.
  • Cook on high for 5 hours (or 8 hours on low.)
  • Using two forks, shred the chicken.
  • Squeeze in lime juice and stir it in.
  • Serve it piping hot in a bowl with avocado, sour cream, grated cheese, and cilantro leaves on top!
