Bacon Egg Croissant Sandwich
Ingredients
- 10 eggs
- ¾ cup heavy whipping cream or milk
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ yellow onion diced
- 1 bell pepper diced
- 12 slices bacon cut in half
- 8 mini croissants cut in half the long way
- 8 slices cheddar cheese
Instructions
- Preheat oven to 375ºF.
- Spray a 9×13-inch baking dish with cooking spray.
- In a bowl dish, whisk together the eggs, milk, salt, and pepper.
- Mix in the yellow onion, and bell pepper.
- Bake for 25 minutes, or until the top starts to get golden brown.
- Turn the oven up to 400ºF and place the bacon on rack in a baking pan.
- Bake 15-20 minutes, or until bacon reaches desired doneness.
- Broil for 5-10 minutes, or until they reach desired doneness.
- When the eggs are done, cool before cutting into 8 slices.
- Layer eggs, bacon and cheese in a smaller container for storage. Separate layers with parchment paper ( we didn’t have any on hand so we used aluminum foil instead)
- In the morning, microwave a slice and place between croissant halves.
