Bacon Egg Croissant Sandwich

Ingredients
  

  • 10 eggs
  • ¾ cup heavy whipping cream or milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ yellow onion diced
  • 1 bell pepper diced
  • 12 slices bacon cut in half
  • 8 mini croissants cut in half the long way
  • 8 slices cheddar cheese

Instructions
 

  • Preheat oven to 375ºF.
  • Spray a 9×13-inch baking dish with cooking spray.
  • In a bowl dish, whisk together the eggs, milk, salt, and pepper.
  • Mix in the yellow onion, and bell pepper.
  • Bake for 25 minutes, or until the top starts to get golden brown.
  • Turn the oven up to 400ºF and place the bacon on rack in a baking pan.
  • Bake 15-20 minutes, or until bacon reaches desired doneness.
  • Broil for 5-10 minutes, or until they reach desired doneness.
  • When the eggs are done, cool before cutting into 8 slices.
  • Layer eggs, bacon and cheese in a smaller container for storage. Separate layers with parchment paper ( we didn’t have any on hand so we used aluminum foil instead)
  • In the morning, microwave a slice and place between croissant halves.
