Preheat oven to 375ºF.
Spray a 9x13-inch baking dish with cooking spray.
In a bowl dish, whisk together the eggs, milk, salt, and pepper.
Mix in the yellow onion, and bell pepper.
Bake for 25 minutes, or until the top starts to get golden brown.
Turn the oven up to 400ºF and place the bacon on rack in a baking pan.
Bake 15-20 minutes, or until bacon reaches desired doneness.
Broil for 5-10 minutes, or until they reach desired doneness.
When the eggs are done, cool before cutting into 8 slices.
Layer eggs, bacon and cheese in a smaller container for storage. Separate layers with parchment paper ( we didn't have any on hand so we used aluminum foil instead)
In the morning, microwave a slice and place between croissant halves.
