Slow Cooker Chicken Tortilla Soup
Ingredients

- 3 boneless skinless chicken breasts
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- salt and pepper
- 1 medium yellow onion chopped
- 2 bell pepper chopped
- 1 28 oz can diced tomatoes with juice
- 1 can Ro-Tel Tomatoes with green chiles
- 3 cups chicken broth
- 6 oz tomato paste
- 6 chipotle peppers in adobo or less if you don't like spicy
- 2 can black beans drained and rinsed
- 1 limes juiced
- 1 14 oz can corn whole kernel
Toppings
- sour cream
- tortilla strips
- cilantro
- avocado
- cheddar cheese
Instructions
- Place the chicken in the crock pot and season with chili powder, cumin, garlic powder and salt and pepper.
- Add the onion, bell pepper, black beans, corn, tomatoes, chicken broth, tomato paste, chipotle peppers. Stir together.
- Cook on high for 5 hours (or 8 hours on low.)
- Using two forks, shred the chicken.
- Squeeze in lime juice and stir it in.
- Serve it piping hot in a bowl with avocado, sour cream, grated cheese, and cilantro leaves on top!
