Slow Cooker White Chicken Chili

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1/4 cup cilantro chopped
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 24 oz chicken broth low sodium (or 6 tsp broth base + 3 cups water)
  • 2 15 oz can Great Northern beans drained and rinsed
  • 2 15 oz can butter beans
  • 1 15 oz can whole kernel white corn drained
  • 1 7 oz can diced green chiles mild or hot
  • 4 oz cream cheese softened
  • 1/4 cup half and half

Seasonings

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper

Toppings

  • Mexican cheese shredded
  • sour cream
  • avocado sliced
  • jalapeño sliced
  • Tortilla Strips
  • cilantro chopped

Instructions
 

  • Place chicken on bottom of crockpot, sprinkle seasonings over chicken. Add beans, garlic, onion, corn, and chiles.
  • Add chicken stock and cilantro. Cook on high in crockpot for 4 hours or on medium for 6 hours.
  • Remove chicken from crockpot and shread.
  • Mix in cream cheese and half and half then cook on high for 15 minutes until mix is creamy

Toppings

  • Top with your favorite toppings. Avocado, tortilla chips, and sour cream.
