Slow Cooker White Chicken Chili
Ingredients
- 2 boneless skinless chicken breasts
- 1/4 cup cilantro chopped
- 1 yellow onion diced
- 4 cloves garlic minced
- 24 oz chicken broth low sodium (or 6 tsp broth base + 3 cups water)
- 2 15 oz can Great Northern beans drained and rinsed
- 2 15 oz can butter beans
- 1 15 oz can whole kernel white corn drained
- 1 7 oz can diced green chiles mild or hot
- 4 oz cream cheese softened
- 1/4 cup half and half
Seasonings
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp ground cumin
- 1 tsp oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
Toppings
- Mexican cheese shredded
- sour cream
- avocado sliced
- jalapeño sliced
- Tortilla Strips
- cilantro chopped
Instructions
- Place chicken on bottom of crockpot, sprinkle seasonings over chicken. Add beans, garlic, onion, corn, and chiles.
- Add chicken stock and cilantro. Cook on high in crockpot for 4 hours or on medium for 6 hours.
- Remove chicken from crockpot and shread.
- Mix in cream cheese and half and half then cook on high for 15 minutes until mix is creamy
Toppings
- Top with your favorite toppings. Avocado, tortilla chips, and sour cream.
