Breakfast Burritos

Ingredients

  • 2 Tbsp butter
  • 1 lb Italian sausage
  • 12 eggs
  • 1/8 cup milk
  • 2 bell pepper
  • 1 medium yellow onion
  • 18 tortillas
  • 1 package Simply Potatoes
  • 1 cup cheddar cheese

  • hot sauce we use Formosa's Habanero Sauce

Instructions

  • Cook potatoes according to instructions on package.
  • In a separate pan, 1 lb brown sausage over medium heat.
  • Remove potatoes from pan and add 2 tbsp butter to pan.
  • Dice 2 bell peppers and 1 medium yellow onion.
  • Whisk eggs and milk in a bowl, pour mixture into pan.
  • Scramble 12 eggs until they start firming and add peppers and onion.
  • Cook for 3 minutes then add sausage and potatoes.
  • Add 1 cup cheese and stir until melted.
  • Spoon into tortilla and top with hot sauce. Wrap it up.

Freezer Storage

  • Wrap burritos in paper towel, and plastic wrap.
  • Store in fridge or freezer. Burritos will last in the fridge for up to 3 days. They can be microwaved straight out of the freezer, but we prefer to thaw burritos in the fridge overnight before microwaving. We find that these burritos are best reheated wrapped in a paper towel.
