Heat oven to 400 degrees. Lightly grease a 13x9 inch baking pan with olive oil and set aside.
In a pan, cook the chicken. Remove from pan, shred and set aside in a large bowl.
Cook 1 cup Orzo Pasta, set aside.
In a small pot over medium heat melt 2 tablespoons of butter and add the onion. Season with salt and pepper. Allow the onion to cook until translucent, about 2 minutes. Add flour and cook for 2 minutes stirring constantly.
Whisk in the milk, chicken broth, and mustard. Simmer until it thickens slightly, about 4 minutes.
In a large bowl mix chicken, ham, pasta, gravy and 1 cup of Swiss cheese. Spread evenly in baking dish.
In another bowl, mix bread crumbs, butter, Italian seasoning, cayenne, Parmesan, and remaining Swiss cheese. Season with salt and pepper. Mix thoroughly. Spread the breadcrumbs over top of the casserole. Bake about 20 minutes or until top is golden brown.
